Wednesday — Red chile enchilada, Capri vegetables, Spanish rice, strawberry shortcake.

Thursday — Fish and chips, three-bean salad, biscuit, fruit salad.

Friday — Ham, scalloped potatoes, green beans, stewed tomatoes, whole-wheat roll with margarine, apricot crisp.

Monday — Chicken fajitas, pinto beans, Spanish rice, oatmeal raisin cookie.

Tuesday — Beef tips, egg noodles, country blend vegetables, whole-wheat bread with margarine, mixed fruit.

Wednesday — Red chile beef enchiladas, tossed salad with dressing, pinto beans, rice pudding.

Thursday — Lemon pepper chicken, wild rice, Brussels sprouts and carrots, tropical fruit.

Friday — Sub sandwich with lettuce, tomato, cheese, mustard and mayo, pasta salad with veggies, corn, sugar cookie.

Monday — Open-face red chile burger with cheese, hominy, lima beans, white cake with strawberries.

Tuesday — Spaghetti with meat sauce, tossed salad with dressing, Texas toast, peaches.
